
Spicy Ratatouille

Ingredients:
- 2 tablespoons Olive oil
- 2 cups Onions, diced
- 4 cloves Garlic cloves, minced
- 2 cups Red bell pepper, diced
- 3 cups Eggplant, cut into cubes
- 2 cups Zucchinis, sliced
- 1 can Cans of diced tomatoes
- 3 tablespoons Tomato paste
- 10 leaves Fresh basil leaves
- 1 teaspoon Cayenne pepper
- 1 teaspoon Sugar
- 2 teaspoons Salt
- 1 teaspoon Black pepper
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onions and cook for 2-3 minutes, until they start to soften.
- Add the minced garlic and red bell pepper to the pot, and continue to cook for another 2-3 minutes.
- Add the eggplant and zucchini to the pot, and cook for a further 5 minutes, until they start to brown.
- Stir the diced tomatoes, tomato paste, and fresh basil into the pot, and bring the mixture to a simmer.
- Add the cayenne pepper, sugar, salt, and black pepper to the pot and stir well. Let the ratatouille simmer for 20-30 minutes, until the vegetables are tender.
- Serve the ratatouille hot, with fresh bread on the side if desired.
