Spicy Provencal Baked Fish

Ingredients:

  • 2 pieces Fish fillets
  • 2 medium-sized Tomatoes
  • 4 cloves Garlic cloves
  • 1 Tablespoon Capers
  • 1/3 cup Olives
  • 1/2 teaspoon Red pepper flakes
  • 2 Tablespoons Olive oil
  • To taste Salt
  • To taste Black pepper
  • 1 Teaspoon Dried Herbs de Provence

Instructions:

  1. Preheat the oven to 200°C (392°F) while you prepare the other ingredients.
  2. Dice the tomatoes and place them in a baking dish with the diced garlic cloves, capers, and olives. Sprinkle with the red pepper flakes and Herbs de Provence, then drizzle the mixture with the olive oil. Stir until everything is well combined.
  3. Season the fish fillets with salt and pepper, then lay them on top of the tomato mixture in the baking dish.
  4. Bake the dish in the preheated oven for about 30 minutes, or until the fish flakes easily with a fork. Halfway through cooking, spoon some of the tomato mixture over the fish fillets to keep them moist.
  5. Serve the Spicy Provencal Baked Fish hot, preferably with a side of crusty French bread to sop up the tasty juices. Enjoy your midnight snack!
