Spicy Pork Ragout à la Française

Ingredients:
- 1.5 pounds Pork shoulder cut into chunks
- 2 tablespoons Olive oil
- 1 large Yellow onion, diced
- 4 Garlic cloves, minced
- 1 cup Red wine
- 28 ounces Crushed tomatoes
- 2 teaspoons Dried thyme
- 1 teaspoon Cayenne pepper
- 2 Bay leaves
- To taste Salt
- To taste Pepper
Instructions:
- 1. Heat the olive oil in a large pot over medium-high heat and add the pork chunks, seasoning with salt and pepper. Brown them on all sides, then remove to a plate.
- 2. In the same pot, add the diced onion, cooking until translucent. Add the minced garlic and cook for another minute.
- 3. Pour in the red wine, scraping the bottom of the pot to deglaze.
- 4. Return the pork back to the pot, followed by the crushed tomatoes, dried thyme, bay leaves, and cayenne pepper. Stir everything together, bring to a simmer, then cover and reduce the heat to low.
- 5. Let the ragout simmer for about 2 hours, until the pork is tender and the flavors have melded together. Adjust the seasonings with more salt, pepper, or cayenne pepper, to your liking.
- 6. Serve the Spicy Pork Ragout à la Française over mashed potatoes or steamed rice, garnished with a sprinkle of fresh thyme or parsley.
