Spicy Pork Ragout à la Française

Ingredients:

  • 1.5 pounds Pork shoulder cut into chunks
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 Garlic cloves, minced
  • 1 cup Red wine
  • 28 ounces Crushed tomatoes
  • 2 teaspoons Dried thyme
  • 1 teaspoon Cayenne pepper
  • 2 Bay leaves
  • To taste Salt
  • To taste Pepper

Instructions:

  1. 1. Heat the olive oil in a large pot over medium-high heat and add the pork chunks, seasoning with salt and pepper. Brown them on all sides, then remove to a plate.
  2. 2. In the same pot, add the diced onion, cooking until translucent. Add the minced garlic and cook for another minute.
  3. 3. Pour in the red wine, scraping the bottom of the pot to deglaze.
  4. 4. Return the pork back to the pot, followed by the crushed tomatoes, dried thyme, bay leaves, and cayenne pepper. Stir everything together, bring to a simmer, then cover and reduce the heat to low.
  5. 5. Let the ragout simmer for about 2 hours, until the pork is tender and the flavors have melded together. Adjust the seasonings with more salt, pepper, or cayenne pepper, to your liking.
  6. 6. Serve the Spicy Pork Ragout à la Française over mashed potatoes or steamed rice, garnished with a sprinkle of fresh thyme or parsley.
