Spicy Mixed Vegetable Curry

Ingredients:

  • 4 cups Mixed vegetables
  • 1 large Onion
  • 2 medium Tomatoes
  • 1 inch piece Ginger
  • 4 Garlic cloves
  • 3 Green Chillies
  • 2 teaspoons Curry powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 2 tablespoons Vegetable oil
  • to taste Salt

Instructions:

  1. Chop the onion, tomatoes, ginger, garlic and green chillies.
  2. In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them splutter.
  3. Add the chopped onions to the pan and fry until they are golden brown.
  4. Add the ginger, garlic, and green chillies to the pan and fry for a few more minutes.
  5. Add the tomatoes to the pan and cook until they are soft and pulpy.
  6. Add the curry powder, turmeric powder, and salt to the pan and mix well. Cook for a few minutes until the spices are well blended.
  7. Add the mixed vegetables to the pan and stir to coat the vegetables in the spice mixture.
  8. Cover the pan and let the vegetables cook until they are done. Stir occasionally to prevent the vegetables from sticking to the bottom of the pan.
  9. Serve the spicy mixed vegetable curry hot with rice or flatbreads.
