
Spicy Mixed Vegetable Curry

Ingredients:
- 4 cups Mixed vegetables
- 1 large Onion
- 2 medium Tomatoes
- 1 inch piece Ginger
- 4 Garlic cloves
- 3 Green Chillies
- 2 teaspoons Curry powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Cumin seeds
- 2 tablespoons Vegetable oil
- to taste Salt
Instructions:
- Chop the onion, tomatoes, ginger, garlic and green chillies.
- In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them splutter.
- Add the chopped onions to the pan and fry until they are golden brown.
- Add the ginger, garlic, and green chillies to the pan and fry for a few more minutes.
- Add the tomatoes to the pan and cook until they are soft and pulpy.
- Add the curry powder, turmeric powder, and salt to the pan and mix well. Cook for a few minutes until the spices are well blended.
- Add the mixed vegetables to the pan and stir to coat the vegetables in the spice mixture.
- Cover the pan and let the vegetables cook until they are done. Stir occasionally to prevent the vegetables from sticking to the bottom of the pan.
- Serve the spicy mixed vegetable curry hot with rice or flatbreads.
