
Spicy Midnight Tamagoyaki

Ingredients:
- 4 Eggs
- 1 tablespoon Soy Sauce
- 1 tablespoon Mirin
- 1 teaspoon Sugar
- 2 tablespoons Spicy Mayo
- as needed Vegetable Oil
Instructions:
- In a bowl, mix the eggs, soy sauce, mirin, and sugar until well combined.
- In a non-stick skillet, heat some vegetable oil over medium heat. Pour a small amount of the egg mixture into the pan, tilting it around to spread evenly.
- Once the egg is half set, start rolling it towards one end of the pan. Add more oil if needed and then pour more egg mixture into the pan, lifting the cooked part so that the new mixture flows underneath.
- Keep rolling the egg as you add more, until all the mixture is used. Remove the tamagoyaki from the pan and let it cool.
- Once cooled, slice the roll into bite size pieces and serve with spicy mayo drizzled on top for a spicy kick.
