
Spicy Midnight Pasta Arrabbiata

Ingredients:
- 200 grams Pasta
- 2 tablespoon Olive Oil
- 2 cloves Garlic
- 1 tablespoon Red Chili Flakes
- 400 grams Canned Chopped Tomatoes
- To Taste Salt
- A Handful Fresh Basil Leaves
- 50 grams Parmesan Cheese
Instructions:
- Boil water in a large pot, add a pinch of salt and the pasta. Cook it as per the instructions on the package.
- While the pasta is cooking, heat olive oil in a pan. Add finely chopped garlic and sauté till it turns golden brown. Follow up with red chili flakes.
- Add canned chopped tomatoes to the pan and stir well. Cook it for 15-20 minutes until the sauce thickens.
- Once cooked, drain the pasta and reserve some of the pasta water. Add the pasta into the pan with the sauce.
- Stir well to evenly coat the pasta, add the reserved pasta water if needed.
- Add salt to taste, tear in the fresh basil leaves and stir again.
- Serve hot, sprinkled with grated parmesan cheese. Enjoy!
