
Spicy Midnight Mexican Rice

Ingredients:
- 1 cup Long grain rice
- 2 tablespoons Olive oil
- 1 small, finely chopped Onion
- 2 minced Garlic cloves
- 1 deseeded and finely chopped Jalapeno pepper
- 1 small, diced Red bell pepper
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 cup Diced tomatoes
- 2 cups Chicken broth
- to taste Salt
- a handful Chopped fresh cilantro
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the rice and cook until golden brown, about 5 minutes.
- Add the onion, garlic, jalapeno, and bell pepper to the skillet and sauté until the vegetables are softened, about 5 minutes.
- Stir in the cumin, chili powder, diced tomatoes, chicken broth, and salt. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and simmer until the rice is tender and has absorbed all the liquid, about 15 minutes.
- Fluff the rice with a fork and stir in the chopped cilantro. Serve the Spicy Midnight Mexican Rice right away, garnished with a little extra chopped cilantro if you like.
