Spicy Midnight Mexican Rice

Ingredients:

  • 1 cup Long grain rice
  • 2 tablespoons Olive oil
  • 1 small, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 deseeded and finely chopped Jalapeno pepper
  • 1 small, diced Red bell pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 cup Diced tomatoes
  • 2 cups Chicken broth
  • to taste Salt
  • a handful Chopped fresh cilantro

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the rice and cook until golden brown, about 5 minutes.
  2. Add the onion, garlic, jalapeno, and bell pepper to the skillet and sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the cumin, chili powder, diced tomatoes, chicken broth, and salt. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the skillet, and simmer until the rice is tender and has absorbed all the liquid, about 15 minutes.
  5. Fluff the rice with a fork and stir in the chopped cilantro. Serve the Spicy Midnight Mexican Rice right away, garnished with a little extra chopped cilantro if you like.
