Spicy Midnight Mango Chicken

Ingredients:

  • 2 Nos Chicken Breasts
  • 2 Nos Firm ripe Mangoes
  • 1 Nos Red Bell Pepper
  • 1 Nos Onion
  • 2 Cloves Garlic
  • 1 Inch piece Ginger
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Red Chili Flakes
  • 2 Tbsp Olive Oil
  • 1 Tbsp Honey
  • few stalks Spring onions for garnish

Instructions:

  1. Chop the chicken breasts into cubes, the mangoes into chunks, the red bell pepper and onion into slices.
  2. In a pan, heat the olive oil. Sauté the garlic and ginger until fragrant.
  3. Add the chicken and cook until it turns white on all sides.
  4. Add the red bell pepper and onion, cook until they're slightly soft.
  5. While this is being cooked, in a separate bowl, mix together the soy sauce, red chili flakes, and honey.
  6. Pour the sauce into the pan with chicken. Stir everything well until the chicken and veggies are coated in the sauce.
  7. Finally, add the mango chunks. Cook for a few more minutes until the mango heats through.
  8. Garnish with spring onions, and your Spicy Midnight Mango Chicken is ready to serve!
