
Spicy Midnight Mango Chicken

Ingredients:
- 2 Nos Chicken Breasts
- 2 Nos Firm ripe Mangoes
- 1 Nos Red Bell Pepper
- 1 Nos Onion
- 2 Cloves Garlic
- 1 Inch piece Ginger
- 3 Tbsp Soy Sauce
- 1 Tbsp Red Chili Flakes
- 2 Tbsp Olive Oil
- 1 Tbsp Honey
- few stalks Spring onions for garnish
Instructions:
- Chop the chicken breasts into cubes, the mangoes into chunks, the red bell pepper and onion into slices.
- In a pan, heat the olive oil. Sauté the garlic and ginger until fragrant.
- Add the chicken and cook until it turns white on all sides.
- Add the red bell pepper and onion, cook until they're slightly soft.
- While this is being cooked, in a separate bowl, mix together the soy sauce, red chili flakes, and honey.
- Pour the sauce into the pan with chicken. Stir everything well until the chicken and veggies are coated in the sauce.
- Finally, add the mango chunks. Cook for a few more minutes until the mango heats through.
- Garnish with spring onions, and your Spicy Midnight Mango Chicken is ready to serve!
