
Spicy Midnight Fried Rice

Ingredients:
- 2 cups Rice
- 2 tablespoons Vegetable Oil
- 2 cloves Garlic
- 1 Green Bell Pepper
- 2 teaspoons Red Chili Flakes
- 2 tablespoons Soy Sauce
- 2 stalks Spring Onions
- 2 Eggs
Instructions:
- Cook the rice until it is al dente, drain and set aside.
- Heat the vegetable oil in a large pan over medium heat.
- Chop the garlic and green bell peppers and add them to the pan. Cook them until they are soft.
- Add the red chili flakes and stir well. If you want the dish to be very spicy, you can add more chili flakes.
- Add the cooked rice to the pan and mix well to combine.
- Push the rice and vegetables to one side of the pan, then crack the eggs into the other side. Scramble them until they are cooked, then mix everything together.
- Pour the soy sauce over the rice and mix well. Continue to cook for a few more minutes until everything is well combined.
- Chop the spring onions and sprinkle them over the top of the rice before serving.
