Spicy Midnight Fried Rice

Ingredients:

  • 2 cups Rice
  • 2 tablespoons Vegetable Oil
  • 2 cloves Garlic
  • 1 Green Bell Pepper
  • 2 teaspoons Red Chili Flakes
  • 2 tablespoons Soy Sauce
  • 2 stalks Spring Onions
  • 2 Eggs

Instructions:

  1. Cook the rice until it is al dente, drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat.
  3. Chop the garlic and green bell peppers and add them to the pan. Cook them until they are soft.
  4. Add the red chili flakes and stir well. If you want the dish to be very spicy, you can add more chili flakes.
  5. Add the cooked rice to the pan and mix well to combine.
  6. Push the rice and vegetables to one side of the pan, then crack the eggs into the other side. Scramble them until they are cooked, then mix everything together.
  7. Pour the soy sauce over the rice and mix well. Continue to cook for a few more minutes until everything is well combined.
  8. Chop the spring onions and sprinkle them over the top of the rice before serving.
