
Spicy Midnight Egg Fried Rice

Ingredients:
- 2 whole Eggs
- 2 cups Jasmine rice
- 2 tablespoons Vegetable oil
- 2 cloves Garlic
- 1/2 whole White onion
- 1 whole Red bell pepper
- 1/2 cup Green peas
- 2 tablespoons Soya sauce
- 1 tablespoon Sriracha sauce
- to taste Salt
- to taste Pepper
Instructions:
- Cook the jasmine rice as per the instructions on its packaging.
- In a large wok or frying pan, heat up the vegetable oil on medium-high heat.
- Add the garlic and onions to the pan and sauté them until they become translucent, which will take about 2-3 minutes.
- Drop in the sliced red bell pepper and green peas, stir fry them together for another 2 minutes.
- Push all the vegetables to the side of the pan, creating a space in the center. Crack the eggs into this space and scramble them lightly.
- Once the eggs are slightly cooked, mix them in with the rest of the vegetables.
- Add the cooked rice to the pan, followed by the soya sauce and sriracha sauce. Stir well to combine.
- Season with salt and pepper to taste.
- Stir-fry everything together for a minute or two more, until the rice grains are well coated in the sauces and ingredients are well mixed.
