Spicy Midnight Egg Fried Rice

Ingredients:

  • 2 whole Eggs
  • 2 cups Jasmine rice
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1/2 whole White onion
  • 1 whole Red bell pepper
  • 1/2 cup Green peas
  • 2 tablespoons Soya sauce
  • 1 tablespoon Sriracha sauce
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cook the jasmine rice as per the instructions on its packaging.
  2. In a large wok or frying pan, heat up the vegetable oil on medium-high heat.
  3. Add the garlic and onions to the pan and sauté them until they become translucent, which will take about 2-3 minutes.
  4. Drop in the sliced red bell pepper and green peas, stir fry them together for another 2 minutes.
  5. Push all the vegetables to the side of the pan, creating a space in the center. Crack the eggs into this space and scramble them lightly.
  6. Once the eggs are slightly cooked, mix them in with the rest of the vegetables.
  7. Add the cooked rice to the pan, followed by the soya sauce and sriracha sauce. Stir well to combine.
  8. Season with salt and pepper to taste.
  9. Stir-fry everything together for a minute or two more, until the rice grains are well coated in the sauces and ingredients are well mixed.
  10. Serve your Spicy Egg Fried Rice hot and savor your midnight craving satisfaction!
