Spicy Midnight Chinese Pasta

Ingredients:

  • 200 grams Pasta
  • 2 cloves Garlic
  • 1 teaspoon Red Chili Flakes
  • 2 chopped Shallots
  • 100 grams Mushrooms
  • 1 chopped Green Bell Pepper
  • 2 tablespoons Soya Sauce
  • 1 tablespoon Chinese Rice Vinegar or White Vinegar
  • 2 tablespoons Spring Onion greens
  • 2 tablespoons Olive Oil
  • to taste Salt

Instructions:

  1. First bring a pot of water to boil, add some salt and cook the pasta as per the instructions given on the packet or till they are completely cooked.
  2. Meanwhile, heat olive oil in a pan on medium heat. Once the oil is hot, add chopped garlic, shallots and saute for 2 minutes.
  3. Next add the mushrooms, bell pepper to the pan and cook for 2-3 minutes till they are slightly softened.
  4. Add red chilli flakes to the pan and mix.
  5. Now, add Soya sauce, vinegar and mix. Add the boiled pasta to the pan and toss to combine.
  6. Finally, taste test the pasta and adjust the spice and salt accordingly. Garnish the pasta with spring onion greens.
