
Spicy Midnight Chinese Pasta

Ingredients:
- 200 grams Pasta
- 2 cloves Garlic
- 1 teaspoon Red Chili Flakes
- 2 chopped Shallots
- 100 grams Mushrooms
- 1 chopped Green Bell Pepper
- 2 tablespoons Soya Sauce
- 1 tablespoon Chinese Rice Vinegar or White Vinegar
- 2 tablespoons Spring Onion greens
- 2 tablespoons Olive Oil
- to taste Salt
Instructions:
- First bring a pot of water to boil, add some salt and cook the pasta as per the instructions given on the packet or till they are completely cooked.
- Meanwhile, heat olive oil in a pan on medium heat. Once the oil is hot, add chopped garlic, shallots and saute for 2 minutes.
- Next add the mushrooms, bell pepper to the pan and cook for 2-3 minutes till they are slightly softened.
- Add red chilli flakes to the pan and mix.
- Now, add Soya sauce, vinegar and mix. Add the boiled pasta to the pan and toss to combine.
- Finally, taste test the pasta and adjust the spice and salt accordingly. Garnish the pasta with spring onion greens.
