Spicy Mexican Veggie Tacos

Ingredients:

  • 8 pieces Corn Tortillas
  • 2 tablespoons Olive Oil
  • 2 pieces Bell Peppers
  • 1 large Zucchini
  • 1 medium Onion
  • 2 pieces Garlic Cloves
  • 1 piece Jalapeno Pepper
  • 1 teaspoon Cumin Powder
  • 2 teaspoons Chili Powder
  • to taste Salt
  • 1 bunch Fresh Cilantro
  • 1 piece Lime
  • 1 large Avocado
  • as desired Mexican Cheese

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the bell peppers, zucchini, onion, and roughly chopped garlic to the pan. Saute until the vegetables are tender and starting to caramelize.
  3. Add the finely chopped jalapeno, cumin, chili powder and salt to taste. Stir to combine and cook for another 2 minutes.
  4. Warm the corn tortillas in a dry pan over medium heat, flipping occasionally.
  5. Spread a layer of mashed avocado onto each tortilla.
  6. Top the tortillas with the vegetable mixture, sprinkle with Mexican cheese, and garnish with fresh cilantro.
  7. Serve the tacos with a slice of lime on the side.
