
Spicy Mexican Veggie Tacos

Ingredients:
- 8 pieces Corn Tortillas
- 2 tablespoons Olive Oil
- 2 pieces Bell Peppers
- 1 large Zucchini
- 1 medium Onion
- 2 pieces Garlic Cloves
- 1 piece Jalapeno Pepper
- 1 teaspoon Cumin Powder
- 2 teaspoons Chili Powder
- to taste Salt
- 1 bunch Fresh Cilantro
- 1 piece Lime
- 1 large Avocado
- as desired Mexican Cheese
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the bell peppers, zucchini, onion, and roughly chopped garlic to the pan. Saute until the vegetables are tender and starting to caramelize.
- Add the finely chopped jalapeno, cumin, chili powder and salt to taste. Stir to combine and cook for another 2 minutes.
- Warm the corn tortillas in a dry pan over medium heat, flipping occasionally.
- Spread a layer of mashed avocado onto each tortilla.
- Top the tortillas with the vegetable mixture, sprinkle with Mexican cheese, and garnish with fresh cilantro.
- Serve the tacos with a slice of lime on the side.
