
Spicy Mexican Veggie Fajitas

Ingredients:
- 3 whole bell peppers, assorted colors
- 1 large onion
- 2 whole garlic cloves
- 2 whole jalapeno
- 1 whole lime
- 1 packet fajita seasoning mix
- 2 tablespoons vegetable oil
- 8 tortillas
- to taste sour cream
- to taste guacamole
- to taste salsa
Instructions:
- 1. Slice the bell peppers, onion, jalapenos and garlic.
- 2. Heat the vegetable oil in a large fry pan over medium-high heat.
- 3. Add the sliced vegetables and garlic to the pan, cook until just tender.
- 4. Sprinkle the fajita seasoning mix over the vegetables, stir to coat.
- 5. Cook for another 2-3 minutes, until the vegetables are well coated with the seasoning.
- 6. Squeeze the lime over the vegetables, stir to combine.
- 7. Warm the tortillas according to package instructions.
- 8. Spoon the vegetable mixture onto the warmed tortillas.
- 9. Top with sour cream, guacamole and salsa as desired.
