Spicy Mexican Vegetable Tacos

Ingredients:

  • 8 pieces Corn tortillas
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 medium Onion
  • 2 pieces Jalapeno pepper
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 bunch Cilantro
  • 1 piece Lime
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Slice the bell peppers, onion, and jalapeno peppers into thin strips.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced vegetables to the skillet and sauté until they are tender and lightly browned, about 7-8 minutes.
  4. Season the vegetables with cumin, paprika, salt, and pepper. Stir well to combine.
  5. Heat the corn tortillas in a dry skillet or in the oven until they are warm and pliable.
  6. To assemble the tacos, distribute the sautéed vegetables evenly among the tortillas.
  7. Top each taco with fresh cilantro and a squeeze of lime juice. If you like extra spice, add more sliced jalapeno peppers.
  8. Serve immediately and enjoy your spicy Mexican vegetable tacos!
