
Spicy Mexican Vegetable Tacos

Ingredients:
- 8 pieces Corn tortillas
- 1 large Red bell pepper
- 1 large Green bell pepper
- 1 medium Onion
- 2 pieces Jalapeno pepper
- 2 tablespoons Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 bunch Cilantro
- 1 piece Lime
- to taste Salt
- to taste Pepper
Instructions:
- Slice the bell peppers, onion, and jalapeno peppers into thin strips.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced vegetables to the skillet and sauté until they are tender and lightly browned, about 7-8 minutes.
- Season the vegetables with cumin, paprika, salt, and pepper. Stir well to combine.
- Heat the corn tortillas in a dry skillet or in the oven until they are warm and pliable.
- To assemble the tacos, distribute the sautéed vegetables evenly among the tortillas.
- Top each taco with fresh cilantro and a squeeze of lime juice. If you like extra spice, add more sliced jalapeno peppers.
