Spicy Mexican Vegetable Stir Fry

Ingredients:

  • 2 tbsp olive oil
  • 1 medium size onion
  • 3 pcs, minced garlic cloves
  • 1 sliced bell pepper
  • 2 medium size, sliced zucchini
  • 2 sliced into discs corncobs
  • 2 medium size, chopped tomatoes
  • 2 pcs, remove seeds if less heat is desired jalapeno pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt
  • 1 tbsp lime juice
  • to garnish fresh cilantro

Instructions:

  1. Heat the oil in a large pan over medium heat
  2. Saute the onion and garlic until tender, around 5 minutes
  3. Add the bell pepper, zucchini, corn discs and jalapeno pepper to the pan. Continue to cook for around 10 minutes, stirring occasionally
  4. Add the tomatoes, cumin, paprika and salt. Stir to combine and cook until the vegetables are tender
  5. Remove from the heat and stir in the lime juice
  6. Garnish with fresh cilantro and serve hot
