
Spicy Mexican Vegetable Stir Fry

Ingredients:
- 2 tbsp olive oil
- 1 medium size onion
- 3 pcs, minced garlic cloves
- 1 sliced bell pepper
- 2 medium size, sliced zucchini
- 2 sliced into discs corncobs
- 2 medium size, chopped tomatoes
- 2 pcs, remove seeds if less heat is desired jalapeno pepper
- 1 tsp cumin
- 1 tsp paprika
- to taste salt
- 1 tbsp lime juice
- to garnish fresh cilantro
Instructions:
- Heat the oil in a large pan over medium heat
- Saute the onion and garlic until tender, around 5 minutes
- Add the bell pepper, zucchini, corn discs and jalapeno pepper to the pan. Continue to cook for around 10 minutes, stirring occasionally
- Add the tomatoes, cumin, paprika and salt. Stir to combine and cook until the vegetables are tender
- Remove from the heat and stir in the lime juice
- Garnish with fresh cilantro and serve hot
