Spicy Mexican Shrimp Tacos

Ingredients:

  • 1 lb Shrimp
  • 2 tablespoons Olive oil
  • 2 Garlic cloves
  • 1 teaspoon Chipotle chilli powder
  • to taste Table salt
  • to taste Black pepper
  • 8 Corn tortillas
  • 1/2 head Cabbage
  • 1/4 cup Cilantro
  • 2 limes Lime
  • 1 Avocado
  • 1/2 cup Sour cream

Instructions:

  1. In a large bowl, mix together the shrimp, olive oil, minced garlic cloves, chipotle chilli powder, salt, and pepper. Let marinate for 15 minutes.
  2. While the shrimp is marinating, prepare your toppings. Thinly slice the cabbage, dice the avocado, chop the cilantro, and cut the limes into wedges.
  3. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side, until pink and fully cooked.
  4. Heat the corn tortillas in the oven or on the stovetop, until warm.
  5. Assemble the tacos by layering on the cabbage, shrimp, avocado, and cilantro. Squeeze a lime wedge over the top and drizzle with sour cream. Serve immediately.
