
Spicy Mexican Seafood Stew

Ingredients:
- 2 tablespoons olive oil
- 1 whole, chopped onion
- 3 cloves, minced garlic cloves
- 1 14.5-ounce can diced tomatoes
- 2 peppers, finely chopped chipotle peppers in adobo sauce
- 1.5 pounds seafood mix
- 4 cups fish stock
- 1 whole, juiced lime
- to taste finely chopped coriander leaves
- to taste salt
- to taste black pepper
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add onion and garlic and sauté until onions become translucent, about 5 minutes.
- Add diced tomatoes, chipotle peppers, and part of the fish stock to the pot and bring to a boil.
- Reduce to a simmer and add the seafood mix. Cook until the seafood is fully cooked, about 15 minutes.
- Add the rest of the fish stock, lime juice, coriander, salt, and pepper. Stir for a few minutes until all ingredients are well combined.
- Serve hot, garnished with additional coriander leaves if desired. Enjoy your spicy seafood stew!
