Spicy Mexican Seafood Stew

Ingredients:

  • 2 tablespoons olive oil
  • 1 whole, chopped onion
  • 3 cloves, minced garlic cloves
  • 1 14.5-ounce can diced tomatoes
  • 2 peppers, finely chopped chipotle peppers in adobo sauce
  • 1.5 pounds seafood mix
  • 4 cups fish stock
  • 1 whole, juiced lime
  • to taste finely chopped coriander leaves
  • to taste salt
  • to taste black pepper

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add onion and garlic and sauté until onions become translucent, about 5 minutes.
  3. Add diced tomatoes, chipotle peppers, and part of the fish stock to the pot and bring to a boil.
  4. Reduce to a simmer and add the seafood mix. Cook until the seafood is fully cooked, about 15 minutes.
  5. Add the rest of the fish stock, lime juice, coriander, salt, and pepper. Stir for a few minutes until all ingredients are well combined.
  6. Serve hot, garnished with additional coriander leaves if desired. Enjoy your spicy seafood stew!
