Spicy Mexican Seafood Paella

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground paprika
  • 1 can diced tomatoes
  • 2 jalapeno, sliced
  • 1.5 cup long grain rice
  • 3 cups chicken stock
  • 1 lb large shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded
  • 0.25 cup fresh cilantro, chopped
  • 8 pieces lime wedges

Instructions:

  1. In a large pan, heat the olive oil over medium heat. Add the onion and bell pepper, sauté until softened.
  2. Add the garlic, turmeric, paprika, and diced tomatoes, sauté for another 2 minutes.
  3. Add the sliced jalapenos and rice, mix everything together so the rice is coated in the sauce.
  4. Pour in the chicken stock, bring to a boil, then lower the heat to a simmer.
  5. Add the shrimp and mussels, cover and let cook until the rice is tender and the seafood is cooked through, about 20-25 minutes.
  6. Sprinkle fresh cilantro on top, and serve with lime wedges on the side, squeeze the lime juice over the paella before eating.
