Spicy Mexican Seafood Paella

Ingredients:
- 1 tbsp olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp ground paprika
- 1 can diced tomatoes
- 2 jalapeno, sliced
- 1.5 cup long grain rice
- 3 cups chicken stock
- 1 lb large shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 0.25 cup fresh cilantro, chopped
- 8 pieces lime wedges
Instructions:
- In a large pan, heat the olive oil over medium heat. Add the onion and bell pepper, sauté until softened.
- Add the garlic, turmeric, paprika, and diced tomatoes, sauté for another 2 minutes.
- Add the sliced jalapenos and rice, mix everything together so the rice is coated in the sauce.
- Pour in the chicken stock, bring to a boil, then lower the heat to a simmer.
- Add the shrimp and mussels, cover and let cook until the rice is tender and the seafood is cooked through, about 20-25 minutes.
- Sprinkle fresh cilantro on top, and serve with lime wedges on the side, squeeze the lime juice over the paella before eating.
