
Spicy Mexican Seafood Chilaquiles

Ingredients:
- 3 cups Tortilla Chips
- 1 pound Shrimp
- 1 cup Lump crab meat
- 2 units Jalapenos
- 4 units Roma tomatoes
- 1 cup Onions
- 2 units Garlic cloves
- 2 cups Mexican cheese blend
- To Taste units Cilantro
- 1 unit Avocado
- 1 unit Lime
- To Taste teaspoons Salt
- To Taste teaspoons Pepper
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- For the sauce, chop the tomatoes, onions, garlic, and jalapenos. Add them to a pan over medium heat.
- Cook the veggies until they're tender and start to brown, about 10 minutes.
- Remove the pan from the heat and blend the mixture until smooth, then return it to the pan.
- Add the shrimp and crab meat to the pan and cook for an additional 5 minutes.
- In a large baking dish, layer half of the tortilla chips, then half of the cooked seafood and sauce mixture, followed by half the cheese. Repeat the layers with the remaining ingredients.
- Bake in the preheated oven until the cheese is melted and bubbling, about 15 minutes. Remove from the oven and let cool slightly.
- Top with diced avocado, chopped cilantro, and a squeeze of fresh lime juice. Season with salt and pepper to taste before serving.
