
Spicy Mexican Scrambled Eggs (Huevos Revueltos ala Mexicana)

Ingredients:
- 8 Eggs
- 2 tbsp Olive oil
- 1 medium, finely chopped Onion
- 2 medium, finely chopped Jalapeno peppers
- 2 medium, chopped Tomatoes
- 1 minced Garlic clove
- to taste Salt
- to taste Black pepper
- A handful, chopped Cilantro
- 100 grams, shredded Cheddar cheese
Instructions:
- 1. In a large bowl, beat the eggs lightly and set aside.
- 2. Heat the olive oil in a large skillet on medium heat. Add the onions and jalapeno peppers, and saute until the onions are translucent.
- 3. Add the tomatoes and garlic to the skillet and continue to saute for a few minutes until the tomatoes soften.
- 4. Pour the beaten eggs into the skillet, and season with salt and black pepper. Cook the eggs, stirring gently, until they begin to set.
- 5. Sprinkle the cheddar cheese and chopped cilantro over the scrambled eggs. Cover the skillet and cook for a couple more minutes until the cheese is melted.
- 6. Give the scrambled eggs a final stir to distribute the melted cheese. Serve the Spicy Mexican Scrambled Eggs hot, with warm toast or tortillas on the side.
