Spicy Mexican Scrambled Eggs (Huevos Revueltos ala Mexicana)

Ingredients:

  • 8 Eggs
  • 2 tbsp Olive oil
  • 1 medium, finely chopped Onion
  • 2 medium, finely chopped Jalapeno peppers
  • 2 medium, chopped Tomatoes
  • 1 minced Garlic clove
  • to taste Salt
  • to taste Black pepper
  • A handful, chopped Cilantro
  • 100 grams, shredded Cheddar cheese

Instructions:

  1. 1. In a large bowl, beat the eggs lightly and set aside.
  2. 2. Heat the olive oil in a large skillet on medium heat. Add the onions and jalapeno peppers, and saute until the onions are translucent.
  3. 3. Add the tomatoes and garlic to the skillet and continue to saute for a few minutes until the tomatoes soften.
  4. 4. Pour the beaten eggs into the skillet, and season with salt and black pepper. Cook the eggs, stirring gently, until they begin to set.
  5. 5. Sprinkle the cheddar cheese and chopped cilantro over the scrambled eggs. Cover the skillet and cook for a couple more minutes until the cheese is melted.
  6. 6. Give the scrambled eggs a final stir to distribute the melted cheese. Serve the Spicy Mexican Scrambled Eggs hot, with warm toast or tortillas on the side.
