Spicy Mexican Scrambled Eggs

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Olive oil
  • 0.5 whole Onion
  • 2 whole Garlic cloves
  • 2 whole Jalapenos
  • 2 whole Tomatoes
  • 1 cup Cheddar Cheese
  • to taste pinch Salt
  • to taste pinch Pepper
  • 2 tablespoon Fresh Cilantro

Instructions:

  1. 1. Chop the onion, garlic, jalapenos and tomatoes finely.
  2. 2. Heat the olive oil in a frying pan over medium heat. Add the onion, garlic, and jalapenos and sauté until softened.
  3. 3. Add the tomatoes to the pan and cook until they’re soft and the mixture is slightly saucy.
  4. 4. Crack the eggs into a bowl. Whisk them together and then pour them into the pan.
  5. 5. Cook the eggs, stirring gently, until they reach your desired level of doneness.
  6. 6. Sprinkle the eggs with cheese and let it melt, then season the eggs with salt and pepper.
  7. 7. Sprinkle the dish with fresh cilantro and serve hot with tortillas or bread.
