
Spicy Mexican Scrambled Eggs

Ingredients:
- 4 whole Eggs
- 2 tablespoons Olive oil
- 0.5 whole Onion
- 2 whole Garlic cloves
- 2 whole Jalapenos
- 2 whole Tomatoes
- 1 cup Cheddar Cheese
- to taste pinch Salt
- to taste pinch Pepper
- 2 tablespoon Fresh Cilantro
Instructions:
- 1. Chop the onion, garlic, jalapenos and tomatoes finely.
- 2. Heat the olive oil in a frying pan over medium heat. Add the onion, garlic, and jalapenos and sauté until softened.
- 3. Add the tomatoes to the pan and cook until they’re soft and the mixture is slightly saucy.
- 4. Crack the eggs into a bowl. Whisk them together and then pour them into the pan.
- 5. Cook the eggs, stirring gently, until they reach your desired level of doneness.
- 6. Sprinkle the eggs with cheese and let it melt, then season the eggs with salt and pepper.
- 7. Sprinkle the dish with fresh cilantro and serve hot with tortillas or bread.
