Spicy Mexican Rice

Ingredients:

  • 1 cup Long grain rice
  • 2 cups Chicken broth
  • 1 cup Tomato sauce
  • 1 tbsp Garlic
  • 1 Yellow onion
  • 2 Jalapeno
  • 1 Green bell pepper
  • 1/2 tsp Salt
  • 2 tbsp Vegetable oil
  • 1/2 tsp Cumin

Instructions:

  1. In a large skillet over medium heat, heat the oil. Add the chopped onion, bell pepper, and jalapeno, then sauté until they start to soften.
  2. Stir in the garlic and continue to cook for another minute.
  3. Add the rice to the skillet, stirring constantly to ensure it does not burn.
  4. Once the rice is slightly toasted, stir in the tomato sauce, chicken broth, salt, and cumin.
  5. Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
  6. Serve hot and enjoy your spicy Mexican rice!
