
Spicy Mexican Rice

Ingredients:
- 1 cup Long grain rice
- 2 cups Chicken broth
- 1 cup Tomato sauce
- 1 tbsp Garlic
- 1 Yellow onion
- 2 Jalapeno
- 1 Green bell pepper
- 1/2 tsp Salt
- 2 tbsp Vegetable oil
- 1/2 tsp Cumin
Instructions:
- In a large skillet over medium heat, heat the oil. Add the chopped onion, bell pepper, and jalapeno, then sauté until they start to soften.
- Stir in the garlic and continue to cook for another minute.
- Add the rice to the skillet, stirring constantly to ensure it does not burn.
- Once the rice is slightly toasted, stir in the tomato sauce, chicken broth, salt, and cumin.
- Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
- Serve hot and enjoy your spicy Mexican rice!
