Spicy Mexican Pork Breakfast Quesadilla

Ingredients:

  • 1 lb Pork loin
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 medium Onion
  • 4 cloves Garlic clove
  • 1/2 cup Cilantro
  • 8 pieces Flour tortillas
  • 2 cups Cheddar cheese
  • 2 tbsp Olive oil
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Chop the pork loin into small pieces, then season with salt and pepper to taste.
  2. Heat olive oil in a pan over medium heat, then cook the pork until it is browned on all sides and cooked through.
  3. While the pork is cooking, finely chop the onion, garlic, cilantro, and chipotle peppers.
  4. Once the pork is cooked, add the chopped vegetables and peppers to the pan, stirring to mix with the pork. Continue cooking until the vegetables are soft and the flavors are well combined.
  5. Lay out the flour tortillas and evenly distribute the pork and veggie mixture onto one half of each tortilla.
  6. Sprinkle the cheddar cheese evenly over the pork mixture, then fold the tortilla in half to cover the filling.
  7. Cook the quesadillas in a clean, heated pan until the tortilla is browned and crispy, and the cheese has melted. Flip to cook both sides evenly.
