Spicy Mexican Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic Cloves
  • 1 medium size Onion
  • 2 peppers Jalapeño Peppers
  • 1 can Canned Diced Tomatoes
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Cumin
  • 1 can Black Beans
  • 1 cup Corn Kernels
  • 1 cup Cheddar Cheese
  • For garnishing Coriander

Instructions:

  1. Boil the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Sauté the garlic and onions until they become translucent.
  3. Add the diced jalapeño peppers to the skillet and continue to sauté for another minute.
  4. Stir in the canned tomatoes, chili powder, and cumin. Let it simmer for about 5 minutes to let the flavors blend together.
  5. Add the black beans and corn to the skillet and let it simmer for another 5 minutes.
  6. Mix in the cooked pasta and stir until well coated with the sauce.
  7. Top off with cheddar cheese and cover the skillet until the cheese is melted.
  8. Garnish with fresh coriander before serving.
