
Spicy Mexican Pasta

Ingredients:
- 500 grams Pasta
- 2 tablespoons Olive Oil
- 2 cloves Garlic Cloves
- 1 medium size Onion
- 2 peppers Jalapeño Peppers
- 1 can Canned Diced Tomatoes
- 1 teaspoon Red Chili Powder
- 1 teaspoon Cumin
- 1 can Black Beans
- 1 cup Corn Kernels
- 1 cup Cheddar Cheese
- For garnishing Coriander
Instructions:
- Boil the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Sauté the garlic and onions until they become translucent.
- Add the diced jalapeño peppers to the skillet and continue to sauté for another minute.
- Stir in the canned tomatoes, chili powder, and cumin. Let it simmer for about 5 minutes to let the flavors blend together.
- Add the black beans and corn to the skillet and let it simmer for another 5 minutes.
- Mix in the cooked pasta and stir until well coated with the sauce.
- Top off with cheddar cheese and cover the skillet until the cheese is melted.
- Garnish with fresh coriander before serving.
