Spicy Mexican Midnight Pasta

Ingredients:

  • 2 cups Pasta
  • 2 tablespoons Olive Oil
  • 2 Garlic Cloves
  • 1 can Diced Tomatoes
  • 2 Jalapeno Peppers
  • 1 can Black Beans
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 cup Shredded Cheddar Cheese
  • Handful Fresh Cilantro
  • To Taste Salt
  • To Taste Pepper

Instructions:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add the finely chopped garlic and jalapeno and saute until fragrant.
  3. Add diced tomatoes, black beans, chili powder, cumin, salt and pepper to the pan and stir well. Let it simmer for 5 minutes until the sauce thickens.
  4. Add the cooked pasta to the pan and mix well until pasta is completely coated with the sauce. Let it cook for another 2-3 minutes.
  5. Turn off the heat and top the pasta with shredded cheddar cheese. Cover the pan and let it sit for a couple of minutes until the cheese is melted.
  6. Garnish with fresh chopped cilantro before serving. Enjoy your Spicy Mexican Midnight Pasta!
