
Spicy Mexican Midnight Pasta

Ingredients:
- 2 cups Pasta
- 2 tablespoons Olive Oil
- 2 Garlic Cloves
- 1 can Diced Tomatoes
- 2 Jalapeno Peppers
- 1 can Black Beans
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 cup Shredded Cheddar Cheese
- Handful Fresh Cilantro
- To Taste Salt
- To Taste Pepper
Instructions:
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add the finely chopped garlic and jalapeno and saute until fragrant.
- Add diced tomatoes, black beans, chili powder, cumin, salt and pepper to the pan and stir well. Let it simmer for 5 minutes until the sauce thickens.
- Add the cooked pasta to the pan and mix well until pasta is completely coated with the sauce. Let it cook for another 2-3 minutes.
- Turn off the heat and top the pasta with shredded cheddar cheese. Cover the pan and let it sit for a couple of minutes until the cheese is melted.
- Garnish with fresh chopped cilantro before serving. Enjoy your Spicy Mexican Midnight Pasta!
