
Spicy Mexican Huevos Rancheros

Ingredients:
- 8 units Eggs
- 1 can Refried Beans
- 8 units Corn Tortillas
- 1 unit Avocado
- 2 units Jalapeno Peppers
- 4 units Roma Tomatoes
- 0.5 unit White Onion
- 2 units Garlic Cloves
- Handful Cilantro
- To Taste Salt and Pepper
Instructions:
- Begin by dicing tomatoes, onion, jalapenos and garlic. Chop cilantro. Set everything aside.
- In a pan, cook refried beans until warmed through. Keep warm on low heat.
- In a separate pan, sauté the onion, jalapenos and garlic until onion is translucent. Add tomatoes and cook until softened.
- Meanwhile, in another pan, fry your eggs to your liking (recommend over-easy for traditional Huevos Rancheros).
- While eggs cook, lightly fry your corn tortillas until they are slightly crispy.
- To assemble, spread one quarter of the refried beans on each tortilla, place cooked egg on top. Spoon over some of the sautéed vegetable mix. Top with chopped avocado and cilantro.
- Season with salt and pepper to taste. Enjoy your spicy Mexican Huevos Rancheros!
