Spicy Mexican Huevos Rancheros

Ingredients:

  • 8 units Eggs
  • 1 can Refried Beans
  • 8 units Corn Tortillas
  • 1 unit Avocado
  • 2 units Jalapeno Peppers
  • 4 units Roma Tomatoes
  • 0.5 unit White Onion
  • 2 units Garlic Cloves
  • Handful Cilantro
  • To Taste Salt and Pepper

Instructions:

  1. Begin by dicing tomatoes, onion, jalapenos and garlic. Chop cilantro. Set everything aside.
  2. In a pan, cook refried beans until warmed through. Keep warm on low heat.
  3. In a separate pan, sauté the onion, jalapenos and garlic until onion is translucent. Add tomatoes and cook until softened.
  4. Meanwhile, in another pan, fry your eggs to your liking (recommend over-easy for traditional Huevos Rancheros).
  5. While eggs cook, lightly fry your corn tortillas until they are slightly crispy.
  6. To assemble, spread one quarter of the refried beans on each tortilla, place cooked egg on top. Spoon over some of the sautéed vegetable mix. Top with chopped avocado and cilantro.
  7. Season with salt and pepper to taste. Enjoy your spicy Mexican Huevos Rancheros!
