Spicy Mexican Chicken Breakfast Tacos

Ingredients:

  • 2 cups Boneless chicken
  • 8 units Taco shells
  • 1 medium Onion
  • 2 units Jalapenos
  • 2 units Garlic cloves
  • 4 units Eggs
  • 1 cup Cheddar cheese
  • to taste Cilantro
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper

Instructions:

  1. Heat oil in a large skillet over medium heat. Add the onions, jalapenos, and minced garlic. Cook until onions become translucent.
  2. Add the chicken to the skillet. Season the chicken with salt, pepper, cumin, and cayenne pepper. Cook until the chicken is fully cooked.
  3. In a separate pan, scramble the eggs until fully cooked. Season with salt and pepper.
  4. Warm the taco shells in the oven or on the stovetop.
  5. Assemble the tacos by layering the chicken, scrambled eggs, and topping with cheddar cheese and cilantro.
