Spicy Mexican Chicken

Ingredients:

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 1 teaspoon Cumin
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 piece Red bell pepper
  • 1 piece Onion
  • 1 can Can of diced tomatoes
  • 1 can Can of green chiles

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chicken breasts to the pan and cook until browned on both sides.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add the minced garlic, red bell pepper and onion and sauté until soft.
  5. Add in the cumin, cayenne pepper, salt and black pepper and stir well.
  6. Add the diced tomatoes and green chiles to the pan, stir well, and let simmer for 10 minutes.
  7. Add in the chicken, cover the pan, and let it cook on medium heat for 20-25 minutes, or until the chicken is cooked through.
  8. Serve hot with your choice of side dish.
