
Spicy Mexican Chicken

Ingredients:
- 4 pieces Chicken breasts
- 2 tablespoons Olive oil
- 2 pieces Garlic cloves
- 1 teaspoon Cumin
- 1/2 teaspoon Cayenne pepper
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 piece Red bell pepper
- 1 piece Onion
- 1 can Can of diced tomatoes
- 1 can Can of green chiles
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the chicken breasts to the pan and cook until browned on both sides.
- Remove the chicken from the pan and set aside.
- In the same pan, add the minced garlic, red bell pepper and onion and sauté until soft.
- Add in the cumin, cayenne pepper, salt and black pepper and stir well.
- Add the diced tomatoes and green chiles to the pan, stir well, and let simmer for 10 minutes.
- Add in the chicken, cover the pan, and let it cook on medium heat for 20-25 minutes, or until the chicken is cooked through.
- Serve hot with your choice of side dish.
