Spicy Mexican Breakfast Tacos

Ingredients:

  • 8 units Eggs
  • 0.5 pounds Chorizo Sausage
  • 8 units Small Flour Tortillas
  • 2 units Avocado
  • 1 cup Refried Beans
  • 2 units Jalapeno Peppers
  • 1 cup Salsa
  • 1 bunch Cilantro
  • 1 cup Queso Fresco
  • 1 units Lime
  • 2 tablespoons Oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add the chorizo sausage to the pan and cook until browned.
  3. In a separate pan, scramble the eggs to your desired consistency and season with salt and pepper.
  4. Warm the tortillas in a dry pan over medium heat, or in the microwave for about 10 seconds.
  5. Spread a layer of refried beans on each tortilla.
  6. Top with scrambled eggs, cooked chorizo, and jalapenos.
  7. Garnish with sliced avocado, a sprinkle of queso fresco, drizzle of salsa, and a handful of fresh cilantro leaves.
  8. Squeeze lime juice over the top for a refreshing tang.
  9. Serve immediately and enjoy your spicy Mexican breakfast tacos.
