Ingredients:
- 8 units Eggs
- 0.5 pounds Chorizo Sausage
- 8 units Small Flour Tortillas
- 2 units Avocado
- 1 cup Refried Beans
- 2 units Jalapeno Peppers
- 1 cup Salsa
- 1 bunch Cilantro
- 1 cup Queso Fresco
- 1 units Lime
- 2 tablespoons Oil
- to taste Salt
- to taste Pepper
Instructions:
- Heat oil in a pan over medium heat.
- Add the chorizo sausage to the pan and cook until browned.
- In a separate pan, scramble the eggs to your desired consistency and season with salt and pepper.
- Warm the tortillas in a dry pan over medium heat, or in the microwave for about 10 seconds.
- Spread a layer of refried beans on each tortilla.
- Top with scrambled eggs, cooked chorizo, and jalapenos.
- Garnish with sliced avocado, a sprinkle of queso fresco, drizzle of salsa, and a handful of fresh cilantro leaves.
- Squeeze lime juice over the top for a refreshing tang.
