
Spicy Mexican Breakfast Pasta

Ingredients:
- 500 grams Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 medium size Red onion
- 1 large size Red bell pepper
- 2 pepper Jalapeno
- 400 grams Tomatoes
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 4 large Eggs
- to taste Salt and pepper
- a handful Fresh coriander
- 200 grams Cheddar cheese
Instructions:
- Heat the oil in a large frying pan. Add the garlic and red onion, cook for about 5 minutes on medium heat till they become soft.
- Add the red bell pepper and jalapenos. Cook for another 5 minutes.
- In the meantime, cook the pasta according to the instructions on the packet. Drain and set aside.
- Add tomatoes, chili powder, and cumin to the veggies. Stir well and cook for another 5 minutes till the tomatoes are soft.
- In a separate pan, fry the eggs to your preference.
- Add the cooked pasta to the veggies, mix well. Season with salt and pepper.
- Serve the pasta on plates, top with fried eggs, sprinkle with fresh coriander and grated cheddar cheese.
