Spicy Mexican Breakfast Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 medium size Red onion
  • 1 large size Red bell pepper
  • 2 pepper Jalapeno
  • 400 grams Tomatoes
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 4 large Eggs
  • to taste Salt and pepper
  • a handful Fresh coriander
  • 200 grams Cheddar cheese

Instructions:

  1. Heat the oil in a large frying pan. Add the garlic and red onion, cook for about 5 minutes on medium heat till they become soft.
  2. Add the red bell pepper and jalapenos. Cook for another 5 minutes.
  3. In the meantime, cook the pasta according to the instructions on the packet. Drain and set aside.
  4. Add tomatoes, chili powder, and cumin to the veggies. Stir well and cook for another 5 minutes till the tomatoes are soft.
  5. In a separate pan, fry the eggs to your preference.
  6. Add the cooked pasta to the veggies, mix well. Season with salt and pepper.
  7. Serve the pasta on plates, top with fried eggs, sprinkle with fresh coriander and grated cheddar cheese.
