Spicy Mexican Breakfast Burrito

Ingredients:

  • 8 pieces Eggs
  • 4 pieces Tortilla Wrap
  • 200 grams Chorizo
  • 1 can Refried Beans
  • 1 cup Cheddar Cheese
  • 1 medium Red onion
  • 2 pieces Fresh Jalapenos
  • 1 piece Avocado
  • to taste Cilantro
  • to taste Hot Sauce
  • to taste Salt and Pepper

Instructions:

  1. Cook the chorizo in a non-stick skillet over medium heat until it's well browned.
  2. Add the diced red onion and jalapenos to the skillet. Cook until the onions became translucent.
  3. In another pan, scramble the eggs till it's halfway cooked then add to the skillet.
  4. Warm up the refried beans and spread it on the tortilla wraps.
  5. Add the cooked mixture on top of the refried beans and sprinkle with grated cheddar cheese.
  6. Top it with diced avocado, fresh cilantro, and hot sauce.
  7. Roll up the tortilla wrap tucking in the ends. Serve hot.
