
Spicy Mexican Breakfast Beef Tacos

Ingredients:
- 1 pound Ground beef
- 1 packet Taco seasoning
- 2 tablespoons Olive oil
- 1 cup Onion, finely chopped
- 4 ounces can Green chiles, chopped
- 2 peppers Jalapenos, finely chopped
- 4 Eggs
- 1 cup Grated cheddar cheese
- 8 Tortillas
- to taste Fresh cilantro, chopped
- to serve Fresh lime, sliced
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onion and jalapenos, and saute until they are tender.
- Add the beef to the skillet, and brown until no pink remains. Drain off excess grease.
- Sprinkle the taco seasoning over the beef, and stir until evenly coated. Add the chiles, and cook for another 5 minutes to blend the flavors.
- In another pan, scramble the eggs until just set. Keep warm.
- To serve, lay a tortilla on a plate. Spoon some of the beef mixture onto the center, then top with scrambled eggs and grated cheese. Fold the tortilla to encase the fillings.
- Drizzle with hot sauce if desired, garnish with fresh cilantro, and serve with a slice of lime for squeezing.
