Spicy Mexican Breakfast Beef Tacos

Ingredients:

  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 2 tablespoons Olive oil
  • 1 cup Onion, finely chopped
  • 4 ounces can Green chiles, chopped
  • 2 peppers Jalapenos, finely chopped
  • 4 Eggs
  • 1 cup Grated cheddar cheese
  • 8 Tortillas
  • to taste Fresh cilantro, chopped
  • to serve Fresh lime, sliced

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the onion and jalapenos, and saute until they are tender.
  2. Add the beef to the skillet, and brown until no pink remains. Drain off excess grease.
  3. Sprinkle the taco seasoning over the beef, and stir until evenly coated. Add the chiles, and cook for another 5 minutes to blend the flavors.
  4. In another pan, scramble the eggs until just set. Keep warm.
  5. To serve, lay a tortilla on a plate. Spoon some of the beef mixture onto the center, then top with scrambled eggs and grated cheese. Fold the tortilla to encase the fillings.
  6. Drizzle with hot sauce if desired, garnish with fresh cilantro, and serve with a slice of lime for squeezing.
