Spicy Mediterranean Vegetable Tagine

Ingredients:
- 2 tablespoon olive oil
- 2 garlic cloves
- 1 red onion
- 1 red bell pepper
- 1 zucchini
- 1 eggplant
- 2 carrots
- 1 14.5 ounce can chickpeas
- 1 14.5 ounce can diced tomatoes
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 bunch fresh parsley
Instructions:
- In a large pot, heat the olive oil over medium heat. Add garlic, onion, bell pepper, zucchini, eggplant, and carrots. Cook for about 10 minutes, until vegetables are softened.
- Add the chickpeas, tomatoes, and all spices to the pot. Stir well to combine.
- Reduce heat to low, cover the pot, and let simmer for about 50 minutes, until all vegetables are tender.
- Serve hot, garnished with fresh parsley.
