Spicy Mediterranean Vegetable Tagine

Ingredients:

  • 2 tablespoon olive oil
  • 2 garlic cloves
  • 1 red onion
  • 1 red bell pepper
  • 1 zucchini
  • 1 eggplant
  • 2 carrots
  • 1 14.5 ounce can chickpeas
  • 1 14.5 ounce can diced tomatoes
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bunch fresh parsley

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add garlic, onion, bell pepper, zucchini, eggplant, and carrots. Cook for about 10 minutes, until vegetables are softened.
  2. Add the chickpeas, tomatoes, and all spices to the pot. Stir well to combine.
  3. Reduce heat to low, cover the pot, and let simmer for about 50 minutes, until all vegetables are tender.
  4. Serve hot, garnished with fresh parsley.
