Spicy Mediterranean Vegetable Stew

Ingredients:

  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 medium sized Red Onion
  • 2 medium sized Red and Yellow Bell Peppers
  • 1 can Diced Tomatoes
  • 2 cups Mixed Vegetables (carrots, peas, etc.)
  • 1 teaspoon Chili Flakes
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Paprika
  • to taste Salt and Black Pepper
  • 1/3 cup Feta Cheese
  • for garnish Fresh Parsley

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
  2. Add the bell peppers, cut into strips, into the pan. Stir and cook for about 5 minutes until they begin to soften.
  3. Open a can of diced tomatoes, add it along with the mixed vegetables to the pan. Season with chili flakes, dried oregano, paprika, salt, and pepper.
  4. Cover the pan, reduce the heat to low, and let the stew simmer for about 20 minutes, until all vegetables are tender.
  5. Remove the pan from the heat. Sprinkle crumbled feta cheese over the warm stew.
  6. Garnish with fresh parsley before serving. Enjoy your spicy midnight Mediterranean vegetable stew hot!
