
Spicy Mediterranean Vegetable Stew

Ingredients:
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 medium sized Red Onion
- 2 medium sized Red and Yellow Bell Peppers
- 1 can Diced Tomatoes
- 2 cups Mixed Vegetables (carrots, peas, etc.)
- 1 teaspoon Chili Flakes
- 1/2 teaspoon Dried Oregano
- 1/2 teaspoon Paprika
- to taste Salt and Black Pepper
- 1/3 cup Feta Cheese
- for garnish Fresh Parsley
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
- Add the bell peppers, cut into strips, into the pan. Stir and cook for about 5 minutes until they begin to soften.
- Open a can of diced tomatoes, add it along with the mixed vegetables to the pan. Season with chili flakes, dried oregano, paprika, salt, and pepper.
- Cover the pan, reduce the heat to low, and let the stew simmer for about 20 minutes, until all vegetables are tender.
- Remove the pan from the heat. Sprinkle crumbled feta cheese over the warm stew.
