Spicy Mediterranean Vegetable Skewers

Ingredients:

  • 2 whole red bell peppers
  • 2 whole yellow bell peppers
  • 2 whole zucchini
  • 1 whole eggplant
  • 1 whole red onion
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 minced garlic cloves
  • 1/2 teaspoon cayenne pepper
  • 2 sprigs fresh rosemary
  • to taste salt and black pepper

Instructions:

  1. Cut the peppers, zucchini, eggplant, and onion into large, chunky pieces. They should be roughly the same size.
  2. In a bowl, mix together the olive oil, lemon juice, minced garlic, cayenne pepper, chopped rosemary, salt, and pepper.
  3. Add the cut vegetables to the bowl and toss until they are all covered with the spicy marinade. Let sit for at least 15 minutes.
  4. Preheat your grill or grill pan to medium heat.
  5. Thread the vegetables onto skewers, alternating the types for a colorful presentation.
  6. Grill the skewers for about 10 minutes, turning occasionally, until the vegetables are nicely charred and tender.
  7. Serve the spicy Mediterranean vegetable skewers warm with a side of Greek yogurt or tzatziki sauce.
