
Spicy Mediterranean Vegetable Skewers

Ingredients:
- 2 whole red bell peppers
- 2 whole yellow bell peppers
- 2 whole zucchini
- 1 whole eggplant
- 1 whole red onion
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 minced garlic cloves
- 1/2 teaspoon cayenne pepper
- 2 sprigs fresh rosemary
- to taste salt and black pepper
Instructions:
- Cut the peppers, zucchini, eggplant, and onion into large, chunky pieces. They should be roughly the same size.
- In a bowl, mix together the olive oil, lemon juice, minced garlic, cayenne pepper, chopped rosemary, salt, and pepper.
- Add the cut vegetables to the bowl and toss until they are all covered with the spicy marinade. Let sit for at least 15 minutes.
- Preheat your grill or grill pan to medium heat.
- Thread the vegetables onto skewers, alternating the types for a colorful presentation.
- Grill the skewers for about 10 minutes, turning occasionally, until the vegetables are nicely charred and tender.
- Serve the spicy Mediterranean vegetable skewers warm with a side of Greek yogurt or tzatziki sauce.
