
Spicy Mediterranean Vegetable Shakshuka

Ingredients:
- 2 tablespoons Olive oil
- 1 large Onion
- 1 large Red bell pepper
- 3 Garlic cloves
- 1/2 teaspoon Chili flakes
- 1/2 teaspoon Cumin seeds
- 1 can Diced tomatoes
- 2 cups Spinach leaves
- 4 Large eggs
- 1/2 cup Feta cheese
- to taste Salt
- to taste Black pepper
Instructions:
- Heat olive oil in a large sauté pan on medium heat.
- Add the chopped onion and red bell pepper to the pan and sauté for about 5 minutes, until softened.
- Add garlic, chili flakes, and cumin seeds to the pan and cook for another minute.
- Stir in the diced tomatoes and spinach. Reduce heat to low, cover the pan and let it simmer for about 15 minutes.
- Make four little dips in the sauce. Gently break an egg into each dip. Cover the pan and cook for another 10-15 minutes, until the eggs are done to your liking.
- Sprinkle feta cheese on top. Season with salt and pepper.
- Serve the shakshuka with warm bread.
