Spicy Mediterranean Vegetable Shakshuka

Ingredients:

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 1 large Red bell pepper
  • 3 Garlic cloves
  • 1/2 teaspoon Chili flakes
  • 1/2 teaspoon Cumin seeds
  • 1 can Diced tomatoes
  • 2 cups Spinach leaves
  • 4 Large eggs
  • 1/2 cup Feta cheese
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Heat olive oil in a large sauté pan on medium heat.
  2. Add the chopped onion and red bell pepper to the pan and sauté for about 5 minutes, until softened.
  3. Add garlic, chili flakes, and cumin seeds to the pan and cook for another minute.
  4. Stir in the diced tomatoes and spinach. Reduce heat to low, cover the pan and let it simmer for about 15 minutes.
  5. Make four little dips in the sauce. Gently break an egg into each dip. Cover the pan and cook for another 10-15 minutes, until the eggs are done to your liking.
  6. Sprinkle feta cheese on top. Season with salt and pepper.
  7. Serve the shakshuka with warm bread.
