
Spicy Mediterranean Shrimp Skillet

Ingredients:
- 2 tablespoons Olive oil
- 3 cloves Garlic cloves
- 1 teaspoon Red hot chili flakes
- 1 pound Large shrimp
- 14.5 ounces Canned diced tomatoes
- 1 cup Green Olives
- 1 cup Feta cheese
- A handful Fresh parsley
- To taste Salt
- To taste Pepper
Instructions:
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the skillet and sauté until golden brown.
- Add the red hot chili flakes to the skillet. Stir to combine with the garlic.
- Add the shrimp to the skillet. Cook until they turn pink, about 2-3 minutes per side.
- Add the diced tomatoes and olives to the skillet, and season with salt and pepper. Let it simmer for about 10 minutes.
- Sprinkle feta cheese over the skillet mixture, and let it cook for another 2 minutes or until the cheese begins to melt.
- Garnish with fresh parsley just before serving.
