Spicy Mediterranean Shrimp Skillet

Ingredients:

  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 1 teaspoon Red hot chili flakes
  • 1 pound Large shrimp
  • 14.5 ounces Canned diced tomatoes
  • 1 cup Green Olives
  • 1 cup Feta cheese
  • A handful Fresh parsley
  • To taste Salt
  • To taste Pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic to the skillet and sauté until golden brown.
  3. Add the red hot chili flakes to the skillet. Stir to combine with the garlic.
  4. Add the shrimp to the skillet. Cook until they turn pink, about 2-3 minutes per side.
  5. Add the diced tomatoes and olives to the skillet, and season with salt and pepper. Let it simmer for about 10 minutes.
  6. Sprinkle feta cheese over the skillet mixture, and let it cook for another 2 minutes or until the cheese begins to melt.
  7. Garnish with fresh parsley just before serving.
