
Spicy Mediterranean Shrimp Skewers

Ingredients:
- 1 pound Large shrimp
- 1 whole Lemon
- 2 tablespoons Olive oil
- 2 whole Garlic cloves
- 1 teaspoon Red chili flakes
- 1 bunch Fresh parsley
- 1 bunch Fresh rosemary
- to taste Salt
- to taste Pepper
- 8 pieces Wooden skewers
Instructions:
- Soak the wooden skewers in water for 20 minutes to prevent them from burning.
- Peel and devein the shrimp, leaving the tail on. Rinse and pat dry.
- In a large bowl, combine the juice of one lemon, olive oil, finely chopped garlic, chili flakes, finely chopped parsley and rosemary. Season with salt and pepper.
- Add the shrimp to the bowl and toss to coat. Allow the shrimp to marinate for 15 minutes.
- Thread the shrimp onto the skewers. Heat a grill or grill pan to medium-high heat.
- Grill the shrimp skewers for 2-3 minutes on each side, until they are pink and cooked through.
- Serve the skewers warm with lemon wedges on the side.
