Spicy Mediterranean Shrimp Skewers

Ingredients:

  • 1 pound Large shrimp
  • 1 whole Lemon
  • 2 tablespoons Olive oil
  • 2 whole Garlic cloves
  • 1 teaspoon Red chili flakes
  • 1 bunch Fresh parsley
  • 1 bunch Fresh rosemary
  • to taste Salt
  • to taste Pepper
  • 8 pieces Wooden skewers

Instructions:

  1. Soak the wooden skewers in water for 20 minutes to prevent them from burning.
  2. Peel and devein the shrimp, leaving the tail on. Rinse and pat dry.
  3. In a large bowl, combine the juice of one lemon, olive oil, finely chopped garlic, chili flakes, finely chopped parsley and rosemary. Season with salt and pepper.
  4. Add the shrimp to the bowl and toss to coat. Allow the shrimp to marinate for 15 minutes.
  5. Thread the shrimp onto the skewers. Heat a grill or grill pan to medium-high heat.
  6. Grill the shrimp skewers for 2-3 minutes on each side, until they are pink and cooked through.
  7. Serve the skewers warm with lemon wedges on the side.
