
Spicy Mediterranean Shakshuka

Ingredients:
- 2 tbsp Olive Oil
- 1 cup Red Bell Pepper
- 1 cup Yellow Bell Pepper
- 3 cloves Garlic
- 1 tsp Ground Cumin
- 1 tsp Cayenne Pepper
- 1 tsp Paprika
- to taste Chili Flakes
- 1 can Canned Tomato
- 4 Eggs
- A handful Fresh Parsley
- To Taste Salt
- To Taste Black Pepper
Instructions:
- Heat oil in a large saute pan over medium heat. Add the chopped bell peppers and cook until they are soft.
- Add garlic and spices and cook for another minute.
- Pour the can of tomatoes into the pan, season with salt, pepper, and chili flakes. Let it simmer for 15 minutes.
- Form four small wells in the sauce. Gently break the eggs into each well, sprinkle more pepper on the eggs. Let them cook on medium-low heat for another 8-12 minutes.
- Garnish with fresh parsley and serve immediately.
