Spicy Mediterranean Shakshuka

Ingredients:

  • 2 tbsp Olive Oil
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 3 cloves Garlic
  • 1 tsp Ground Cumin
  • 1 tsp Cayenne Pepper
  • 1 tsp Paprika
  • to taste Chili Flakes
  • 1 can Canned Tomato
  • 4 Eggs
  • A handful Fresh Parsley
  • To Taste Salt
  • To Taste Black Pepper

Instructions:

  1. Heat oil in a large saute pan over medium heat. Add the chopped bell peppers and cook until they are soft.
  2. Add garlic and spices and cook for another minute.
  3. Pour the can of tomatoes into the pan, season with salt, pepper, and chili flakes. Let it simmer for 15 minutes.
  4. Form four small wells in the sauce. Gently break the eggs into each well, sprinkle more pepper on the eggs. Let them cook on medium-low heat for another 8-12 minutes.
  5. Garnish with fresh parsley and serve immediately.
