
Spicy Mediterranean Seafood Shakshuka

Ingredients:
- 2 tbsp olive oil
- 1 medium, chopped onion
- 1 sliced red bell pepper
- 2 minced garlic cloves
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1/2 tsp ground cayenne pepper
- 200 grams shrimp
- 400 grams canned diced tomatoes
- 1/2 cup, crumbled feta cheese
- 4 large eggs
- A handful chopped parsley
- to taste salt and pepper
Instructions:
- Heat the olive oil in a large, deep skillet over medium heat. Add the onions and bell pepper, and cook until softened.
- Add the garlic, cumin, paprika, and cayenne pepper. Cook for about a minute until the spices are well incorporated.
- Add the shrimp and cook until they become pink. This should take around 3-4 minutes.
- Stir in the diced tomatoes, and bring the mixture to a simmer. Cook for around 10-15 minutes to allow the flavors to blend together.
- Make wells in the mixture and crack an egg into each one. Cover the pan and let it simmer until the eggs are cooked to your liking.
- Sprinkle the dish with crumbled feta cheese and chopped parsley. Season with salt and pepper to taste.
- Serve your tasty and spicy Mediterranean seafood shakshuka straight from the skillet with a side of warm bread.
