Spicy Mediterranean Seafood Shakshuka

Ingredients:

  • 2 tbsp olive oil
  • 1 medium, chopped onion
  • 1 sliced red bell pepper
  • 2 minced garlic cloves
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground cayenne pepper
  • 200 grams shrimp
  • 400 grams canned diced tomatoes
  • 1/2 cup, crumbled feta cheese
  • 4 large eggs
  • A handful chopped parsley
  • to taste salt and pepper

Instructions:

  1. Heat the olive oil in a large, deep skillet over medium heat. Add the onions and bell pepper, and cook until softened.
  2. Add the garlic, cumin, paprika, and cayenne pepper. Cook for about a minute until the spices are well incorporated.
  3. Add the shrimp and cook until they become pink. This should take around 3-4 minutes.
  4. Stir in the diced tomatoes, and bring the mixture to a simmer. Cook for around 10-15 minutes to allow the flavors to blend together.
  5. Make wells in the mixture and crack an egg into each one. Cover the pan and let it simmer until the eggs are cooked to your liking.
  6. Sprinkle the dish with crumbled feta cheese and chopped parsley. Season with salt and pepper to taste.
  7. Serve your tasty and spicy Mediterranean seafood shakshuka straight from the skillet with a side of warm bread.
