Spicy Mediterranean Seafood Paella

Ingredients:
- 2 tablespoons Olive oil
- 3 cloves, minced Garlic
- 1 large, finely chopped Onion
- 1 large, thinly sliced Red bell pepper
- 2 medium, diced Tomatoes
- to taste Red chili flakes
- 1.5 cups Spanish rice
- 1 teaspoon Paprika
- 1 pinch Saffron threads
- 3.5 cups Fish stock
- 1 pound peeled and deveined Shrimp
- 1/2 pound Mussels
- 1/2 pound Squid
Instructions:
- 1. Heat the olive oil in a large paella pan or wide frying pan over medium heat. Add the garlic, onion, and bell pepper. Cook for about 5 minutes until the onion is translucent.
- 2. Stir in the diced tomatoes, red chili flakes, Spanish rice, paprika, and saffron. Stir for a few minutes until the rice is coated with the oil.
- 3. Pour in the fish stock and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until most of the liquid is absorbed and the rice is nearly tender.
- 4. Add the shrimp, mussels, and squid to the pan, pushing them down into the rice. Cook for about 10 more minutes until the seafood is cooked and the rice is tender. If the paella looks dry but the rice still isn’t done, you can add a bit more stock and continue cooking.
- 5. Let the paella rest for a few minutes before serving to let the flavors meld together. Serve hot.
