
Spicy Mediterranean Roasted Vegetables

Ingredients:
- 1 bowl Vegetables (eggplant, zucchini, bell peppers, tomatoes, onions)
- 1 cup Olive oil
- 3 pcs Garlic cloves
- 2 tsp Red chili flakes
- 1 tsp Dried oregano
- to taste Sea salt
- to taste Freshly milled black pepper
- 1 bunch Fresh parsley
Instructions:
- Preheat your oven to 200C/400F.
- Chop all the vegetables into bite-sized chunks and place them in a large mixing bowl.
- Peel and finely chop the garlic cloves.
- To the bowl of vegetables, add the olive oil, chopped garlic, red chili flakes, dried oregano, salt, and pepper. Toss well to combine, ensuring all the vegetables are well-coated in the olive oil and spices.
- Spread the vegetables out in a single layer on a large baking sheet.
- Roast in the preheated oven for 30-40 minutes, or until the vegetables are softly roasted and slightly charred at the edges. Turn the vegetables over halfway through cooking.
- Remove from the oven and sprinkle over the fresh parsley before serving.
