Spicy Mediterranean Roasted Vegetables

Ingredients:

  • 1 bowl Vegetables (eggplant, zucchini, bell peppers, tomatoes, onions)
  • 1 cup Olive oil
  • 3 pcs Garlic cloves
  • 2 tsp Red chili flakes
  • 1 tsp Dried oregano
  • to taste Sea salt
  • to taste Freshly milled black pepper
  • 1 bunch Fresh parsley

Instructions:

  1. Preheat your oven to 200C/400F.
  2. Chop all the vegetables into bite-sized chunks and place them in a large mixing bowl.
  3. Peel and finely chop the garlic cloves.
  4. To the bowl of vegetables, add the olive oil, chopped garlic, red chili flakes, dried oregano, salt, and pepper. Toss well to combine, ensuring all the vegetables are well-coated in the olive oil and spices.
  5. Spread the vegetables out in a single layer on a large baking sheet.
  6. Roast in the preheated oven for 30-40 minutes, or until the vegetables are softly roasted and slightly charred at the edges. Turn the vegetables over halfway through cooking.
  7. Remove from the oven and sprinkle over the fresh parsley before serving.
