
Spicy Mediterranean Rice Dish

Ingredients:
- 2 cups Basmati Rice
- 3 tablespoons Olive Oil
- 3 cloves, minced Garlic cloves
- 1 Red Onion
- 1 teaspoon Red Pepper Flakes
- 1 can Diced Tomatoes
- 1 Zucchini
- to taste Salt
- to taste Black Pepper
- 0.5 teaspoon Saffron
- 4 cups Vegetable Broth
- 0.5 cup Freshly chopped Parsley
Instructions:
- Rinse the basmati rice thoroughly under cold water until the water runs clear.
- Heat the olive oil in a large pan over medium heat.
- Add minced garlic and chopped onion to the pan, sauté until it becomes translucent.
- Add red pepper flakes to the pan and sauté for around 30 seconds.
- Add diced tomatoes, chopped zucchini, rice, salt, black pepper, and saffron to the pan. Stir the mix gently so all the ingredients combine well.
- Increase the heat to high, add vegetable broth to the pan and bring it to boil.
- Reduce the heat to low, cover the pan with a lid and let it simmer for around 20 minutes, or until the rice is cooked.
- Turn off the heat and wait for a few minutes before fluffing the rice.
- Sprinkle the freshly chopped parsley over the dish before serving.
