Spicy Mediterranean Rice Dish

Ingredients:

  • 2 cups Basmati Rice
  • 3 tablespoons Olive Oil
  • 3 cloves, minced Garlic cloves
  • 1 Red Onion
  • 1 teaspoon Red Pepper Flakes
  • 1 can Diced Tomatoes
  • 1 Zucchini
  • to taste Salt
  • to taste Black Pepper
  • 0.5 teaspoon Saffron
  • 4 cups Vegetable Broth
  • 0.5 cup Freshly chopped Parsley

Instructions:

  1. Rinse the basmati rice thoroughly under cold water until the water runs clear.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add minced garlic and chopped onion to the pan, sauté until it becomes translucent.
  4. Add red pepper flakes to the pan and sauté for around 30 seconds.
  5. Add diced tomatoes, chopped zucchini, rice, salt, black pepper, and saffron to the pan. Stir the mix gently so all the ingredients combine well.
  6. Increase the heat to high, add vegetable broth to the pan and bring it to boil.
  7. Reduce the heat to low, cover the pan with a lid and let it simmer for around 20 minutes, or until the rice is cooked.
  8. Turn off the heat and wait for a few minutes before fluffing the rice.
  9. Sprinkle the freshly chopped parsley over the dish before serving.
