Spicy Mediterranean Rice

Ingredients:

  • 2 cups Basmati rice
  • 2 tablespoons Olive oil
  • 1 Red onion
  • 3 Garlic cloves
  • 1 Red bell pepper
  • 1/2 pound Spicy chorizo sausage
  • 1 teaspoon Cayenne pepper
  • 2 tablespoons Tomato paste
  • 4 cups Chicken broth
  • 1/2 teaspoon Saffron threads
  • to taste Salt
  • to taste Freshly ground black pepper
  • 1 cup Frozen peas
  • 4 Lemon wedges

Instructions:

  1. 1. Rinse the basmati rice under cold water until the water runs clear. Set aside.
  2. 2. Heat the olive oil in a large skillet over medium heat. Add the onion and saute until translucent.
  3. 3. Add the garlic, red bell pepper, chorizo, cayenne pepper, and tomato paste. Stir well to combine.
  4. 4. Add the rice to the skillet and stir until well coated in the oil and spices.
  5. 5. Pour in the chicken broth, then add the saffron threads. Season with salt and freshly ground black pepper.
  6. 6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice has absorbed most of the liquid and is tender.
  7. 7. Stir in the frozen peas, then cover and cook for an additional 5 minutes, or until the peas are heated through.
  8. 8. Serve the rice hot, garnished with lemon wedges. Adjust seasoning if necessary.
