
Spicy Mediterranean Rice

Ingredients:
- 2 cups Basmati rice
- 2 tablespoons Olive oil
- 1 Red onion
- 3 Garlic cloves
- 1 Red bell pepper
- 1/2 pound Spicy chorizo sausage
- 1 teaspoon Cayenne pepper
- 2 tablespoons Tomato paste
- 4 cups Chicken broth
- 1/2 teaspoon Saffron threads
- to taste Salt
- to taste Freshly ground black pepper
- 1 cup Frozen peas
- 4 Lemon wedges
Instructions:
- 1. Rinse the basmati rice under cold water until the water runs clear. Set aside.
- 2. Heat the olive oil in a large skillet over medium heat. Add the onion and saute until translucent.
- 3. Add the garlic, red bell pepper, chorizo, cayenne pepper, and tomato paste. Stir well to combine.
- 4. Add the rice to the skillet and stir until well coated in the oil and spices.
- 5. Pour in the chicken broth, then add the saffron threads. Season with salt and freshly ground black pepper.
- 6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice has absorbed most of the liquid and is tender.
- 7. Stir in the frozen peas, then cover and cook for an additional 5 minutes, or until the peas are heated through.
- 8. Serve the rice hot, garnished with lemon wedges. Adjust seasoning if necessary.
