Spicy Mediterranean Pork Skewers

Ingredients:

  • 500 grams Pork tenderloin
  • 2 cloves Garlic
  • 1 piece Red bell pepper
  • 100 grams Greek yogurt
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cut the pork tenderloin into 1-inch cubes.
  2. In a bowl, combine the garlic, paprika, cayenne pepper, olive oil, lemon juice, salt, and pepper.
  3. Add the pork cubes to the bowl and mix well to coat.
  4. Cover the bowl and let the pork marinate for at least 15 minutes.
  5. While the pork is marinating, cut the red bell pepper into bite-sized pieces.
  6. Thread alternating pieces of pork and bell pepper onto skewers.
  7. Preheat a grill or griddle over medium heat.
  8. Grill the skewers for about 10 minutes, or until the pork is cooked through.
  9. Serve the skewers with a dollop of Greek yogurt on the side for dipping.
