Spicy Mediterranean Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Crushed red pepper flakes
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup Feta cheese, crumbled
  • 1 cup Fresh basil leaves, chopped
  • to taste Salt and black pepper

Instructions:

  1. Boil pasta in salted water according to package instructions and drain. Reserve 1 cup of pasta water.
  2. Meanwhile, heat olive oil in a large pan over medium heat. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
  3. Add cherry tomatoes and olives to the pan, sauté for 5 minutes or until tomatoes start to burst.
  4. Add the pasta to the pan and mix well. If the pasta is too dry, add reserved pasta water a little at a time.
  5. Season with salt and pepper, then stir in the feta cheese and basil.
  6. Serve hot with additional pepper flakes if desired and enjoy your Spicy Mediterranean Pasta!
