Spicy Mediterranean Midnight Rice

Ingredients:

  • 1 cup Rice
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 teaspoon Red Chili Flakes
  • 1 unit Red Bell Pepper
  • 1 unit Green Bell Pepper
  • 1 unit Onion
  • 2 units Tomato
  • 1 tablespoon Mediterranean Spices (oregano, basil, thyme)
  • to taste Salt
  • to taste Pepper
  • 2 cups Chicken Broth

Instructions:

  1. In a pan, heat the olive oil. Add in chopped garlic and red chili flakes, stir until fragrant.
  2. Add chopped onions and bell peppers, sauté until onions are translucent.
  3. Add the rice and Mediterranean spices. Stir well until the rice is coated with the spices and oil.
  4. Pour in the chicken broth, bring to a boil.
  5. Cover the pan, reduce to a simmer, and let it cook for about 20 minutes, until the rice is cooked through.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve hot.
