
Spicy Mediterranean Midnight Rice

Ingredients:
- 1 cup Rice
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 teaspoon Red Chili Flakes
- 1 unit Red Bell Pepper
- 1 unit Green Bell Pepper
- 1 unit Onion
- 2 units Tomato
- 1 tablespoon Mediterranean Spices (oregano, basil, thyme)
- to taste Salt
- to taste Pepper
- 2 cups Chicken Broth
Instructions:
- In a pan, heat the olive oil. Add in chopped garlic and red chili flakes, stir until fragrant.
- Add chopped onions and bell peppers, sauté until onions are translucent.
- Add the rice and Mediterranean spices. Stir well until the rice is coated with the spices and oil.
- Pour in the chicken broth, bring to a boil.
- Cover the pan, reduce to a simmer, and let it cook for about 20 minutes, until the rice is cooked through.
- Taste and adjust seasoning with salt and pepper.
- Serve hot.
