Spicy Mediterranean Midnight Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 1 teaspoon Red chili flakes
  • 1 cup Cherry tomatoes
  • 0.5 cup Kalamata olives
  • 50 grams Feta cheese
  • 20 grams Fresh basil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions:

  1. Cook pasta in a large pot of boiling salted water until al dente. Reserve 1/2 cup of pasta water then drain the pasta.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the garlic and red chili flakes to the skillet, and sauté until fragrant.
  4. Stir in the cherry tomatoes and cook until they start to break down.
  5. Add the cooked pasta, the reserved pasta water, and the kalamata olives to the skillet with the tomatoes and garlic. Stir to combine.
  6. Crumble the feta cheese over the pasta. Season with salt and pepper.
  7. Garnish with fresh basil and serve immediately.
