Spicy Mediterranean Grilled Chicken

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 4 cloves Garlic cloves
  • 1/4 cup Lemon juice
  • 1/4 cup Olive oil
  • 1 tbsp Paprika
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Turmeric
  • 1/2 tsp Ground Cumin
  • 2 tbsp Fresh coriander leaves
  • 1 tsp Salt

Instructions:

  1. In a bowl, mix together garlic, lemon juice, olive oil, paprika, cayenne pepper, turmeric, cumin, coriander, and salt to prepare the marinade.
  2. Add the chicken breasts to the marinade and ensure they are fully coated. Cover the bowl and refrigerate for at least 2 hours.
  3. Preheat your grill to medium heat.
  4. Remove the chicken from the marinade and grill for about 8-10 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
  6. Optionally garnish with fresh parsley and serve with a side of couscous or a fresh salad for a full Mediterranean meal.
