Spicy Mediterranean Fish Casserole

Ingredients:

  • 2 pieces White Fish Fillets
  • 2 tablespoons Olive Oil
  • 1 cup Onions
  • 3 cloves Garlic
  • 1 piece Red Bell Pepper
  • 2 cups Tomatoes
  • 1 tablespoon Chilli Flakes
  • 1/2 cup Black Olives
  • 1 cup White Wine
  • 1/4 cup Fresh Parsley
  • 100 grams Feta Cheese
  • To Taste N/A Salt and Pepper

Instructions:

  1. Preheat your oven to 180°C (356°F).
  2. Heat the olive oil in a saute pan, then add the garlic and onions and sauté until golden.
  3. Add the diced red bell pepper and cook for 2-3 minutes.
  4. Stir in the chopped tomatoes, chilli flakes, a pinch of salt and pepper, then cover and simmer for 10 minutes.
  5. Place the fish fillets in an oven-proof dish.
  6. Pour the spicy tomato sauce over the fish fillets, and scatter the black olives on top.
  7. Pour the wine around the fillets and crumble the feta cheese over the top.
  8. Cover with the lid or foil and cook in the oven for 25-30 minutes, until the fish is flaky.
  9. Garnish with fresh parsley just before serving.
