
Spicy Mediterranean Fish Casserole

Ingredients:
- 2 pieces White Fish Fillets
- 2 tablespoons Olive Oil
- 1 cup Onions
- 3 cloves Garlic
- 1 piece Red Bell Pepper
- 2 cups Tomatoes
- 1 tablespoon Chilli Flakes
- 1/2 cup Black Olives
- 1 cup White Wine
- 1/4 cup Fresh Parsley
- 100 grams Feta Cheese
- To Taste N/A Salt and Pepper
Instructions:
- Preheat your oven to 180°C (356°F).
- Heat the olive oil in a saute pan, then add the garlic and onions and sauté until golden.
- Add the diced red bell pepper and cook for 2-3 minutes.
- Stir in the chopped tomatoes, chilli flakes, a pinch of salt and pepper, then cover and simmer for 10 minutes.
- Place the fish fillets in an oven-proof dish.
- Pour the spicy tomato sauce over the fish fillets, and scatter the black olives on top.
- Pour the wine around the fillets and crumble the feta cheese over the top.
- Cover with the lid or foil and cook in the oven for 25-30 minutes, until the fish is flaky.
- Garnish with fresh parsley just before serving.
